Her grandfather bought the farm for olive oil and horses; Maria Sole rebuilt it as a biodynamically farmed, low-intervention wine estate, shaped by time in Piedmont and the natural wines of Tenute Dettori in her mother's native Sardinia. Her cellar partner Fabio came via Ar.Pe.Pe in the Valtellina. Granomelo — a wordplay on the single cru Melogranino — is 100% Sangiovese from 21-year-old vines on south-facing sandy clay and silt, spontaneously fermented with three weeks of maceration in cement, aged 24 months in glass demijohns, then six months in bottle, unfined, unfiltered, minimal SO₂. Just 2,500 bottles made. You've already got this one — we wrote it up earlier in this conversation.

Partially destemmed, spontaneously fermented with three weeks of maceration in cement, then aged 24 months in glass demijohns and a further six months in bottle, unfined and unfiltered, with only minimal SO₂ at bottling. Just 2,500 bottles made.

The 2019 Granomelo is a darkly precise, mineral-driven Sangiovese that earns its IGT label by following no one's rules but the vineyard's. It opens with aromas of black currant, dried rose, exotic spice, and crushed rock, with a thread of smoke and air-dried meat that deepens with time. On the palate it is lifted and finessed, with sandy tannins of real tenacity, vivid acidity, and a long savory finish of wild herbs, blood orange, and salted stone.

Pairing: Wild boar ragù over hand-rolled pappardelle, bistecca alla Fiorentina rested with rosemary and good olive oil, a board of aged Pecorino di Pienza with truffle honey, or a slow autumn Sunday of braised short rib eaten at a table where no one checks the time.
