He took over the family's century-old bulk-wine operation from his father in 1998, studied winemaking in Tenerife, and pivoted the project — named Los Loros for the laurel shrubs that populate the upper valley — to bottled estate wines with a holistic, sustainable philosophy.\u003c\/p\u003e\n\u003cp\u003eThe Tinto is 100% Listán Negro, the indigenous red grape of the Canary Islands, grown on 40–50 year-old vines between 700 and 1,300 meters on volcanic sand and clay soils, cooled by Atlantic trade winds and sculpted by extreme altitude. Grapes are hand-harvested, foot-trodden whole-cluster, spontaneously fermented, then aged briefly in neutral barrel and bottled unfined, unfiltered, without added SO₂.\u003c\/p\u003e\n\u003cp\u003eThe 2021 Los Loros Tinto is a translucent, high-altitude volcanic red unlike almost anything grown on mainland Spain. It opens with aromas of dark cherry, crushed wildflowers, smoked herbs, and volcanic earth, with a reductive mineral thread that opens with air.
