The Wine: Founded in 2014 by Verónica Santiago and Nathaniel Malagón, Mina Penélope is a tiny, hand-worked estate whose wines lean into minimal intervention and an old-world sensibility, shaped by patience, restraint, and a close relationship to Valle de Guadalupe.
For the 2023 Ambar, the fruit comes from three organically farmed vineyard sites in Valle de Guadalupe, planted at roughly 950 feet in elevation. Made from 100% Sauvignon Blanc, the wine was destemmed and fermented on skins and seeds for 13 days at low temperatures, then aged in stainless steel for 3 months with light stirring to soften the tannins and round out the texture.
Mina Penélope’s 2023 Ambar is a textured, amber-hued Sauvignon Blanc with a savory edge and an easy, graceful rhythm on the palate. It opens with notes of black tea, dried apricot, and orchard fruit, then finishes with gentle grip, soft structure, and a warm, stony finish that keeps everything in balance.
Pairing: Shrimp aguachile, roast chicken with preserved lemon, saffron rice with mussels, or a wedge of Manchego with Marcona almonds and Castelvetrano olives.
