The Wine: Paitin is one of Barbaresco's oldest estates, founded in 1796 by Benedetto Elia — whose nickname gave the domaine its name — and still owned by the Pasquero-Elia family today across 17 hectares in and around Neive. Their holdings in the Serraboella MGA are the heart of the operation: a long west-facing hill that bends steeply to the south, producing some of the most structured and age-worthy Nebbiolo in the appellation. 

Grapes are farmed organically, harvested by hand, destemmed, and fermented with long macerations of three to six weeks in stainless steel using the traditional submerged-cap technique, then aged a minimum of 18 months in large Slavonian oak casks of 25 to 50 hectoliters.

The 2021 Serraboella is a powerful, structured Barbaresco built for the cellar but already showing its character. It opens with aromas of spiced cherry, cranberry, orange peel, and dried rose, lifted by a fresh botanical thread of clove and earth. On the palate, it is taut and concentrated, with incisive tannins, vibrant acidity, and a long, mineral finish.

Pairing: Beef ragù with pappardelle, aged Parmigiano Reggiano with a drizzle of aged balsamic.
