For Fleur du Silex, the fruit comes from older vines planted on flinty soils, and the wine is fermented with wild yeast. Nicolas Brunet’s 2023 Vouvray Fleur du Silex is a dry Chenin Blanc with plenty of breadth, but it never loses its lift. It opens with notes of ripe apple, yellow plum, white peach, and a little shaved ginger, with a touch of brioche that gives the nose a softer edge. On the palate, it feels creamy and generous at first, then tightens into a bright, mineral finish that keeps the whole wine humming.
Pairing: Roast chicken with tarragon and cream, seared scallops over parsnip purée, cider-braised pork chops, or a wedge of triple-cream brie with toasted almonds and sliced pear.
