The Wine: Los Chuchaquis is the joint project of Ryan Stirm and Jehan Hakimian, making low-intervention California wines that feel playful, site-driven, and a little off the beaten path. Sangre de Tiburcio is made from organically farmed Négrette from Siletto Vineyard in San Benito County, fermented whole cluster, aged in old barrels, then bottled unfined, unfiltered, and without additives. 

2023 Los Chuchaquis Sangre de Tiburcio opens with aromas of pomegranate, sour cherry, and rhubarb, lifted by a floral, peppery edge. On the palate, it is juicy and lightly tannic, with bright acidity, red fruit, and an angular sparkle that keeps the finish fresh and a little untamed.

Pairing: Grilled lamb skewers, blistered peppers tostadas de pescado, or slices of cold pizza.
