The Wine: Gvantsa’s Wine is a small Imeretian project rooted in organic farming and a bright, low-intervention style that lets local grapes speak clearly. This Pét-Nat is made from organically and biodynamically farmed Tsitska, a late-ripening western Georgian variety long associated with sparkling wine, bottled to finish fermentation naturally with a touch of skin contact and no added sulfur.
2023 Gvantsa’s Pét-Nat Tsitska is a crisp, lightly wild expression of Imereti. It opens with aromas of pineapple, pear, and apricot, lifted by pink peppercorn and orange zest. On the palate, it is brisk and finely frothy, with bright orchard fruit, lively acidity, and a dry finish that stays mineral, earthy, and lightly spicy.
Pairing: Khachapuri, herb-heavy cucumber and tomato salad, fried cauliflower with garlic yogurt, or seasonal cherries, salty cheese, and still-warm flatbread.
