The Wine: Justin Girardin is a vigneron based in Santenay, farming 17 hectares across the southern Côte de Beaune — from Maranges and Santenay up through Chassagne-Montrachet, Pommard, and Savigny-lès-Beaune. Les Peuillets sits at the southern end of Savigny's premiers crus, where the appellation borders Beaune on warm, gravelly, brown-red limestone — the side of the village known for rounder, more generous Pinot Noir, in contrast to the cooler, more structured parcels on Savigny's northern slope. The domaine's 50-year-old vines here are hand-harvested, triple-sorted, destemmed, and cold-soaked five days before fermentation on indigenous yeast, then aged 15 months in French oak from Allier and Vosges forests with 22% new oak.

The 2022 Les Peuillets is a supple, aromatic expression of a premier cru that trades on finesse over power. It opens with aromas of dark cherry, crushed raspberry, and dried rose, lifted by a peppery undercurrent. On the palate, it is round and well-structured, with red fruit, warm sandy earth, and tannin that are present but polished — generous in its youth and with the architecture to develop further.

Pairing: Roast duck breast with cherry pan sauce, lamb chops with herbes de Provence, a wedge of ripe Brie with walnuts and a baguette, or a slow Sunday dinner that starts with something simple and ends somewhere better.
