The Wine: Château Peybonhomme is a longtime organic and biodynamic estate run by the Hubert family, known for making soulful, low-intervention Bordeaux with real freshness and personality. L’Atypic comes from limestone-clay soils in Blaye, from older vines farmed organically and biodynamically; the fruit is co-fermented with native yeasts and raised without flashy oak, giving the wine its lifted, unforced feel.
2021 Peybonhomme L’Atypic is a lively, slightly offbeat expression of Bordeaux, combining dark fruit, peppery snap, and stony freshness in a style that feels energetic, earthy, and quietly rebellious. It opens with aromas of black plum, blackberry, and cracked pepper, lifted by a floral, herbal edge. On the palate, it is juicy and bright, with crunchy black fruit, fresh acidity, and a savory, mineral finish that keeps it moving.
Pairing: Grilled Merguez, roast chicken with crisp skin, or a bacon cheeseburger (using pre-sliced American cheese) eaten without much remorse.
