The Wine: Domaine Bobinet is the project of Sébastien Bobinet — an eighth-generation winemaker who grew up in his grandparents' vines and cellar in Saumur — and Émeline Calvez, a former professional dancer who reinvented herself as a sommelière, discovered natural wine at the Paris shop La Quincave, spent a year traveling France working harvests, and ultimately joined Sébastien to make wine together. They farm roughly 12 acres biodynamically on tuffeau — the soft, mineral-rich Loire limestone — with no inputs in the cellar, no fining, no filtration, and no added sulfur.

Californie is one of their chillable, high-energy cuvées, made primarily from Pineau d'Aunis, the peppery and aromatic indigenous Loire red grape rarely found outside the region. The 2024 is organically grown in Saumur, unfined and unfiltered, bottled at 11% ABV with zero added SO₂.

The 2024 Californie is a bright, weightless Loire red built entirely for pleasure in the glass and versatility on the table. It opens with aromas of red cherry, wild strawberry, and crushed black pepper — the hallmark of Pineau d'Aunis — with a floral, slightly earthy lift. On the palate it is light and lively, with crunchy acidity, barely-there tannins, and a dry, spicy finish that lingers just enough to invite another sip. Serve with a chill.

Pairing: Charcuterie with cornichons and mustard, a mushroom and herb omelette, cold sliced chicken with tarragon aioli, or an impromptu picnic of good bread, rillettes, and this pulled straight from a bag of ice on a warm afternoon.
