The Wine: Domaine Jean-Yves Devevey is a small, organically farmed estate in Demigny built from the ground up since 1992, guided by a low-intervention philosophy — minimal sulfur, ambient fermentation, and a commitment to letting the fruit speak without cosmetic intervention. Champs Perdrix is sourced from a 1.93-hectare south-facing parcel in the Commune de Nantoux, planted in 1991 at high density on shallow, rocky brown clay over Oxfordian limestone. Yields are kept low through severe pruning and bunch-thinning; the wine is pressed pneumatically, fermented slowly, then aged 12 months in barrel on fine lees before blending in tank.
Champs Perdrix 2022 is a taut, mineral-driven expression of the Hautes-Côtes de Beaune — more about tension than weight. It opens with aromas of white peach, crushed limestone, and green apple, lifted by a thread of beeswax and dried chamomile. On the palate, it is lean and precise, with bright citrus acidity, a chalky grip, and a finish that lingers with saline persistence and faint hazelnut.
Pairing: Grilled trout with brown butter and capers, a simple leek gratin, steamed mussels with white wine and shallots, or a wedge of aged Comté pulled from the paper on a slow Sunday afternoon.
